Sweet Potato Pie with Piperade


2 Sweet Potatoes or Yams to equal about 2 1/2 cups
1/2 Cup cream
1 Cup Piperade (I use Spicy)
2 Tablespoons melted butter
1 Premade pie crust in a tin or a Pepperidge Farm Frozen Puff Pastry sheet
1/4 Teaspoon Allspice
Pinch of salt and pepper
1 Tablespoon of Orange Juice
1 teaspoon of orange zest
3/4 Cup of toasted sesame Walnuts or something similar (candied walnuts)

Wash, poke with a fork and wrap the potatoes in foil.  Bake in oven about 50 minutes or until really tender.  Let cool and remove the skin.

In a bowl, add potato, Piperade, cream, butter, allspice, large pinch of salt and pepper and orange.  Mash until blended. (it doesn't have to be super smooth) Put in y our pie crust, top with walnuts and make in a pre heated 400 oven, on the middle rack for 35-40 minutes until brown on top.  This is not real sweet and would use a vegetable dish, not a dessert. Now if you choose to pour caramel sauce over it, that's another story...
