Fava Beans with Mushrooms and Piperade


1 cup fava beans

1/2 cup mushrooms (chopped into large chunks)

Beef/Chicken/Vegetable broth

1/2 cup Piperade

A few cloves garlic

Separate fava beans from their skins and put in a saute pan. Pour broth over beans to cover half of them. Throw in a few cloves of garlic and simmer coved for about 7 minutes. Next add the mushrooms and Piperade to the pan. Recover and let simmer for another 5 minutes, or until the beans are tender. This recipe is great over rice, potatoes, polenta, or chicken.
