Saute hamburger/turkey/sausage meat with diced onions (optional)
and cook until tender. Drain oil. Add Piperade, about 1/4 cup water, cumin, salt, and tomato paste and cook until thick. Check
and stir so it doesn't burn. Dice up zucchini, mushrooms, carrots, and celery. Add them add the meat is cooked and simmer
until cooked. Put on buns or a pita pocket.
